Vegetarian Sausage Rolls
We know how hard it can be to get veggies in to the kids, this recipe is a great one for parents to have on hand to sneak some veg in to the kids!
Ingredients
1 brown onion (approx. 180 g), cut into halves
1 tbsp. dried oregano or 1 drop oregano essential oil
100 g walnuts
90 g rolled oats
3 eggs
150 g feta cheese, cut into pieces (3 cm)
1 tbsp. tamari or soy sauce
50 g breadcrumbs
1 tsp (heaped) of Superfeast Mason’s Mushrooms - optional
3 sheets ready-made puff pastry, slightly thawed
Plain flour, for dusting
Milk, for brushing (or milk alternative of choice)
Sesame seeds, for sprinkling (optional)
Method
Preheat oven to 200°C. Line a baking tray with baking paper and set aside.
Place brown onion into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
Add dried oregano, walnuts and rolled oats and chop 3 sec/speed 6. Scrape down sides of mixing bowl with spatula.
Add eggs, feta cheese, tamari or soy sauce and breadcrumbs and Superfeast if using and combine 20 sec/speed 5.
Cut puff pastry sheets into halves and transfer to silicone bread mat or floured work surface.
Place ⅙ of the mixture onto the long edge of 1 pastry sheet half and roll. Cut into four equal portions and place onto prepared baking tray. Brush pastry with milk and sprinkle with sesame seeds (optional). Repeat process with remaining mix and pastry sheet halves until all used.
Bake for 20 minutes (200°C) until crisp and golden. Allow to cool slightly before serving warm.
Conventional Cooks: Follow Steps 2-4 by placing ingredients into a food processor to chop and combine.
NOTES:
You can use dried herbs, or essentials oils such as Rosemary, Thyme etc in place of Oregano.
These make a great lunchbox snack for kiddos!
If you are not serving sausage rolls immediately, allow them to cool slightly before transferring to a wire rack to cool completely. Transfer into a sealable container until ready to use.
Uncooked sausage rolls can be transferred into a sealable container and frozen. Allow to thaw thoroughly before baking as per recipe.
