Nourishing Burrito Bowls

Ingredients

500g high quality mince

Mexican Blend Seasoning

1 tbsp Garlic

1 carrot shredded

1 zucchini shredded

Capsicum - green, yellow, red finely sliced

1x Red Onion finely diced

2x corn cobs, corn removed

To Serve

1 serve of Guacamole (see page 20)

1 serve tomato salsa (see page 22)

Sour Cream

Mozzarella Cheese

Cauliflour Rice, garlic rice, or base of choice

Optional: corn chips, fresh cucumber, shredded lettuce, fresh pineapple

Method

  • In one pan, in a tbsp ghee/butter/oil, fry 500g high quality mince, garlic Mexican Blend Seasoning, carrot, zucchini in a pan until cooked through (and slightly brown). Remove from heat, cover and keep warm.

  • In a separate pan, in a tbsp ghee/butter/oil, on high heat fry sliced capsicum and red onion until browned

  • Serve on the table with different choices of sides. Get creative - there are so many options!
